MTN Hearty Pasta Beef Stew

MTN's Hearty Pasta Beef Stew

Excellent source of Vitamin A and beta-carotene, zinc, folate, iron, and potassium!

Prep Time: 15 minutes
Cook Time: 1 hour, 50 minutes
Total Time: 2 hours 5 minutes

Ingredients

8 ounces pasta
1/4 chopped cup fresh parsley
1/4 tsp crushed red pepper flake
1/2 tsp salt
1/4 tsp pepper
1 thawed cup frozen peas
1 cut into 1 inch cubes lb lean beef
1/2 chopped large onion
2 sliced diagonally into 3/4 inch ovals carrot
1/2 cut into 1/2 inch strips red bell pepper
8 cleaned ounce small mushroom
2 cut into wedges tomato
1 cup red wine
1 bay leaf

Directions:
1. In a large heavy pot, combine beef, carrots, mushrooms, onion, , red pepper, tomatoes, wine, bay leaf, parsley and red pepper flakes.
2. Cover and simmer over low heat for 1 1/2 hours, stirring occasionally.
3. Stir in salt, black pepper and pasta.
4. Cover and cook 10 minutes, stirring occasionally.
5. Add peas and stir to mix.
6. Serve hot.
